每一口都吃到蔓越莓干(cranberries),带点酸。。。蛋糕的柔软和蔓越莓干的口感,非常搭配!甜中带轻微的酸,喜欢!从没想过,把雪芳蛋糕放入小杯子里也可以那么美味可口。
蔓越莓优格雪芳小蛋糕

(做20 个小杯子)
(A)
5个 蛋黄
15克 糖 (原配方使用40克)
65毫升 沙拉油
2小匙 柠檬汁
130克 原味优格
130克 多用途面粉/普通面粉
(B)
7个 蛋白
80克 糖 (原配方使用90克)
(C)
95克 蔓越莓干 (切小块,撒上1/2汤匙的普通面粉,拌均)
1。蛋黄加入糖和沙拉油拌均。
2。倒入柠檬汁和优格混合。
3。加入已过筛的蛋糕粉搅拌均匀。
4。在另一个大碗里,把蛋白搅拌至起粗泡沫,分次加入糖搅拌至硬。
5。蛋白分三次加入蛋黄糊里。
6。将蔓越莓干裹上蛋糕粉后加入蛋糕糊里,再用刮刀轻轻混合。
7。把面糊倒入杯子,3/4满。
8。放入预热烤箱以 180'C 烤15分钟。
9。 一烤好,立即反转杯子在引线的架子上。等完全冷却。
*可以使用22cm的雪芳烤模,以 160'C 烤 1 小时。

冬瓜汤
材料:
300g 冬瓜 (除去皮和籽)
1 条 红萝卜
1汤匙 薏米
1汤匙 北杏
5粒 蚝干
10粒 红枣
2-3块 猪尾骨
海盐适量
做法:
1。猪尾骨放入煮沸水拖水3-5分钟,捞起备用。
2。在一个锅里放入 2.5公升的水,加入所有材料煮滚。
3。转小火煮4小时。
4。加入海盐即可。

Cherating Trip...
Here, I would like to record some of the places that I went during this trip. Not much place we went, we spent most of the time in hotel and rest. All these place is for my reference if I have chance to visit Cherating again. Of course is for sharing ^o^

Hafiz Cherating Activities
There are lot of activities here, like fireflies watching trip, river fun fishing, snorkeling trip, sea fishing, turtle watching (live) and lot more. Hafiz is a very professional guy with fireflies, he gave us a short briefing before we went for the boat to catch up the fireflies. We were there around 9:30pm, still got fireflies but according to Hafiz, the best time for fireflies is around 8pm and with no moon light. No camera or any thing with flash light along the trip. Because the flash light will disturb the fireflies and they will fly away. But with Hafiz professional skill, he manage to use some of the light to attract the fireflies to fly around us. This was so amazing and beautiful. Imagine those fireflies fly around you and you are able to catch them in gentle way. Fireflies are just a tiny little fly, the size just like a mosquito. You can't feel anything even it is on your palm.

Cherating Turtule Sanctuary
The best season to see turtle lay eggs, egg hatching and baby turtle back to the sea is between July - Sept. We missed this period.

Hai Peng Kopitiam
Half an hour drive to this place from cherating. A place for yam char, famous in their coffee. The coffee is too thick till I got headache on that night, LOL! must try their coffee.

Curry Laksa (Restaurant Hoi Yin)
We were suppose heading to the curry fish head restaurant which located same row with Hoi Yin Restaurant, but it was closed. So by not disappoint our stomach, we went to this restaurant. Hoi Yin is famous for its Curry Mee. The noodles comes with chicken, fish cakes, tauhu and fresh kerang.em... still can remember how the taste was...

南北杏菜干汤
汤!汤!汤~!又是汤!喝多汤水,能滋润我们的皮肤。无需害怕喝多汤,只怕喝不够!
1条 红萝卜
2汤匙 南北杏
1-2片 陈皮
1-2片 八爪鱼干
3片 姜
400-500g 猪骨/排骨
海盐适量
做法:
1。猪骨/排骨放入煮滚的水拖水3-5分钟,捞起备用。
2。在一个锅里放入2.5公升的水,加入所有材料煮滚。
3。转小火煮4小时。
4。加入海盐即可。

半包 菜干1条 红萝卜
2汤匙 南北杏
1-2片 陈皮
1-2片 八爪鱼干
3片 姜
400-500g 猪骨/排骨

轻淡芝士蛋糕
还有150克奶油芝士,想做一个不太浓味的芝士蛋糕给我的宝贝。找到一个食谱,使用相同量的奶油芝士。尝试做一个。

材料:
[A]
150g 奶油芝士
250ml 鲜奶
[B]
20g 牛油
[C]
50g 低筋面粉/超细面粉
[D]
3粒 蛋黄
1tsp 香草精
[E]
3粒 蛋白
1/8tsp 塔塔粉
60g 幼糖
盐少许
[F]
1tsp 烹饪巧克力 -- 大约15-20克 (我使用黑巧克力)
做法:
1。小锅放热水,用小火加熱。将[A]放入大锅,再把大锅放在小锅上。炖至幼滑,沒有粒粒。再放[B]拌匀。
2。加入[C]拌匀,然后把大锅移离小锅,待放凉些。再放[D]拌匀,备用。
3。将[E]搅拌至松发,然后加入芝士混合物拌匀。
4。拿起100克的芝士面糊,加入[F]拌匀。
5。将普通芝士面糊倒入已铺上油纸的8”方形烘模。然后加入巧克力芝士面糊,搅成云石花纹。
6。把焗炉预热至160度,用温蒸烤50-60分钟。
7。烤好,马上将蛋糕移离烘模,放凉再置入冰箱中冷藏三小时,即成。

黑豆生鱼药材汤
上星期,回家婆家拿到几条生鱼回家。二哥在家乡的湖边钓了好几条。生鱼拿來煮汤也不错!放对材料的鱼汤,一点都不睲还佷甜哟!当然也有鱼的香味!
1条 生鱼
一大把 黑豆 (约70-80g)
4-5片 北芪
6-8片 淮山
半片 茯神
5条 党参
10粒 红枣
5粒 黑枣
一小把 杞子
一小把 干龙眼
300g 排骨
3片 姜
海盐适量
做法:
1。在一个锅里放入2.5公升的水,加入所有材料煮滚。
2。转小火煮3小时。
3。加入海盐即可,趁热喝。

芝士牛油面包与芝士香肠面包
又一次,做有馅料的小面包!今天的主角--芝士!用回先前做面团的配方。
做法:
1。顺序把原料放入面包盘, 冷水,高筋面粉...即食酵母粉。
2。正确设置面包机,然后按《开始》。我用的是揉捏和发酵程序,因为我要放火腿和香肠在面包里。
3。把面团分成10份(60g每份),每份做成圆形,让面团休息10分钟。
芝士牛油面包
4。把面团擀成长方形,包入牛油块,包裹成椭圆形。收口向底。
芝士香肠面包
4。把面团擀成长方形。包入香肠,卷起。
5。用湿布覆盖面团,发酵1小时。
6。涂上蛋液。放半片乳酪在面团上,撒上细砂糖。
7。放入预热烤箱,用180度烤15分钟至金黄色,取出并冷却。

药材汤

牛蒡黑豆汤
再次,在老火汤这本书里找到一个好汤的食谱(pg101)。有助降低血压,解毒和活血。没有100%的依照食谱配方,把鸡胸肉改变为排骨,用3公升的水变为2公升。但,汤仍然是淸甜美味。^^
材料:
80g 黑豆
80g 马豆
1条 红萝卜
1条 牛蒡
300g 排骨

火腿芝士面包&香肠面包
没有做过有馅料的小面包,试一试吧!没想到,一做就做了12个!嘻!
成份:
115g 冷水
200g 高筋面粉
100g 普通面粉/中筋面粉
1个 鸡蛋
17g 奶粉
50g 幼糖
30g 牛油
20g 白奶油 (shortening)
4g 盐
7g 即食酵母粉
6片 火腿
6片 芝士
6条 香肠
做法:
1。顺序把原料放入面包盘, 冷水,高筋面粉...即食酵母粉。
2。正确设置面包机,然后按《开始》。我用的是揉捏和发酵程序,因为我要放火腿和香肠在面包里。
3。把面团分成12份(50g-55g每份),每份做成圆形,让面团休息10分钟。
4。把面团擀成长方形。6份放火腿和芝士,另6份放香肠,卷起。

莲藕汤
材料:
1段 莲藕
10-15粒 红枣(中)
1把 花生
1把 冬菇蒂
400g 排骨
盐适量
做法:
1。排骨放入煮滚的水拖水3-5分钟,捞起备用。2。在一个锅里放入2.5公升的水,加入所有材料煮滚。
3。转小火煮4小时。
4。加入盐即可。
米香发糕 2
今天是观音诞,做了人生第二次的发糕来拜拜。这次,成功啦!发得太棒了。也给我发现了这次可以发得美美的原因是,我用了最大的火来蒸。可能第一次弄时心信不够吧!一下大火然后小火。用回之前的食谱。还是香香软软的。棒!吃过拜拜的发糕,希望能保平安吧!

老黄瓜汤
这汤有助清热下火。赤小豆有益胃健脾,利水消肿。
材料:
1条 老黄瓜
10-15粒 红枣
1-2片 八爪鱼干
1大巴 赤小豆
1小巴 扁豆
400-500g 排骨
盐适量
做法:
1。排骨放入煮滚的水拖水3-5分钟,捞起备用。2。在一个锅里放入2.5公升的水,加入所有材料煮滚。
3。转小火煮4小时。
4。加入盐即可。
核桃橙皮蛋糕
材料:
250g 牛油
150g 幼糖
50g 巧克力粒
4粒 鸡蛋
150g 自发面粉
75g 面粉
90g 核桃粉
1粒 橙皮碎
30g 核桃,切碎
做法:
1。牛油加入糖拌打至松发,然后逐粒蛋慢慢加入拌匀。
2。加入面粉,自发面粉,核桃粉,橙皮碎和巧克力粒拌匀。
3。倒入已铺上油纸的9”圆形模里。
4。再撒上切碎的核桃。
5。放入预热的烤箱,以乱180c烤45分钟。
6。待冷后切块享用。
